Starting to harvest

We were away for three weeks, so the garden was left mostly to it’s own devices. We had set up an automatic drip irrigation system, so were hoping for the best. We were pleased to come home and find that it was mostly successful. The whole thing has gone a bit wild but most things have survived. The zucchini especially was doing well and I have harvested 18 pounds worth already. We washed and grated them and froze them in two cup portions for use in soups, sauces, and ground meats this winter. I also may squish some into ice cube trays to make smaller blocks of it for smoothies and smaller portions of sauces.

We have also started to harvest potatoes, and so far have dug up about 13 pounds of them, with lots more still to go. We had roasted potatoes for supper tonight and they were absolutely delicious. I forget how much better they are than store bought. Even Kris mentioned it and he normally doesn’t notice differences, and Meredith ate quite a few and she normally does not like potatoes so that was a big endorsement for them. We need to figure out a good, rodent-proof method of storing them. In the past we’ve kept them in a cupboard and they’ve kept until we ate the last ones in December-ish, but I think we will have a lot more this year than we have before.

Bolted lettuces. I need to dig these up and get some winter veggies in.

Corn! I’ve never had much luck with corn, so we will see if this year is any different…

Spaghetti squash. None of my other squash plants germinated and I was a bit busy having a baby so I never did get them reseeded. But this one spaghetti squash plant seems to be making up for it and has tons of squash on it already.

We also went for a walk around the block today and picked a full bucket of blackberries, about 6 pounds worth. It was some work washing them, laying them out on a flat sheet to dry and then freeze, and then bagging, but I think it will be worth it in the winter time. We go through a ton of frozen raspberries, but I’m hoping this year to substitute blackberries instead in a lot of things and save us some money.
